<\/p>\n","protected":false},"excerpt":{"rendered":"My wife and I recently visited the beautiful country of Ireland.\u00a0 We went on a \u201ccottage tour\u201d, which is a semi-fancy way to say:\u00a0 we went and looked at old houses.\u00a0 The average country cottage in Ireland is over 200 years old.\u00a0 They are nearly universally made of stone with thatched roofs and are loaded with character.\u00a0 One of the most striking things about these homes is the size.\u00a0 They are very small, especially compared to the sprawling square footage we are used to in the United States.\u00a0 I\u2019m not an overly tall person, but at just under six feet, I had to duck to enter every doorway.\u00a0 The homes do not waste any space, and most had only a mini-fridge, if they had a refrigerator at all.\u00a0 No refrigerator?\u00a0 I understand the small spaces as a result of limited land and resources\u2014but no refrigerator??<\/p>\n
How on earth do they keep things fresh without a fridge?<\/p>\n
They go to the market and grab what they need for that day.\u00a0 If something cannot keep longer than a few days, they don\u2019t stock it at home.\u00a0 The trip made me think about our massive, shiny smart refrigerators- humming along with digital displays and automatic ice makers, chilled water dispensers and massive double door storage.\u00a0 That thought led to efficacy as I then considered all the food we throw out- doors full of condiments used once until they age beyond use, crisper drawers full of produce that we never actually empty until it is time to throw out.\u00a0 I thought about our concept of fresh and viewed that in contrast against a culture of overkill, rot and then waste.<\/p>\n
